Gravy..... on my mashed potatoes

 Don't you love it when you have one of those nights where you are running a little late and throw dinner together and it comes out awesome? I needed to use up some potatoes - and broccoli, and I had 3 sausages - 2 chicken and 1 veggie, so I decided to make mashed potatoes, steamed broccoli (I ended up adding some cauliflower that we got at our farm tonight) and the sausages. At the last minute, I had a major craving for some gravy for the mashed potatoes. I thought we may get some more mushrooms from the farm - mushroom gravy - but alas, there were no mushrooms to be had. So I ended up throwing some things together and it turned out awesome! Love it when that happens! Warning - I did not take any pictures - we lapped up every bit of it!

Last minute vegetarian gravy

2 T olive oil
2 T butter
2 spoonfuls flour
1 small onion
1 t garlic, minced
2 c vegetarian stock (I used pacific rim organic)
1/2 c milk
3 T soy sauce or tamari
2 T vegebase (Vogue Cuisine)
salt
pepper

Melt oil and butter. Saute onion and garlic 3 minutes. Add flour. Stir 1 minute. Slowly add stock. Cook until thick. Add milk and soy sauce, vegebase. Season with salt and pepper.
Cook over low heat 10 minutes.

Serve over mashed potatoes.

Mr W was happy with his meat and potatoes, my daughter cleaned her plate, and I loved it too!
